Rhubarb Oatmeal Bars

3 cups diced rhubarb
1 ½ cup sugar
2 Tablespoons cornstarch
¼ cup cold water
1 teaspoon vanilla

Dissolve cornstarch in water, combine with rhubarb, sugar and vanilla. Cook until thick.

½ cup brown sugar
1 ½ cup uncooked oatmeal
1 ½ cup flour
½ teaspoon baking soda
1 cup margarine

Stir dry ingredients together then cut in margarine. Place a little more than half the crumb mixture in the bottom of greased 9 x 13 pan. Pat down. Spread rhubarb filling over the top and sprinkle with the remaining crumbs.

Bake 350 degrees for 30 minutes.
